[Directory factors of the nitrate accumulation in vegetables]

The main causes contributing to nitrate accumulation in vegetables, as well as the prevention measures, are presented and analyzed, based upon many experimental data and their links with the cropping techniques. The purpose is to limit the nitrates quantities in vegetables, in order to correspond to the permitted nitrate contents (maximum limit), both for open field and protected crops. Morphological characters, the nitrate metabolisation ability, tendency of high nitrogen supply, modern technology and crop rotation are some of the main factors which are discussed.
