Sources and preparation of dietary fibre

Dietary fibre from different plant sources were analysed. Regarding the composition, yield, water and oil binding capacity, the raw material for pilot plant experiments were chosen and isolation methods elaborated. In pilot plant conditions, dietary fibre preparates were prepared from pea hulls, sunflower hulls, red beet (coloured and colourless) and carrot. The dietary fibre content in the preparates was 79-89 %. Water binding capacity varied from 6.7 to 10.2 g/g and oil binding capacity varied from 2.6 to 8.2 g/g.
