The invention refers to a technology of mineral water processing and is intended for producing the liquid mineral water concentrates as well as the desalted water suitable for producing fruit water. At first, mineral water from a source is cleaned of hard salts. Afterwards the prepared water is delivered to the processing plant where the separation of the mineral water into desalted part and liquid salt concentrate is performed. The mineral water concentrate obtained keeps the quantitative and qualitative salt content of the initial mineral water. The desalted water thus produced has a high degree of cleaning and may be used for preparing the fruit waters and other liquid food products
