In this paper are considered the problems of production, quality and turnovers of lamb meat of sheep breeds raised in Serbia (Yugoslavia). The average annual lamb meat production of 25.2 thausand tons is given for the period 1986-1995, tending to decrease at rate of -1.44% per annum, while the production per capita was 2.7 kg. As far as quality of the lamb meat is concerned, parameters of the two mast presented breeds in Serbia (Yugoslavia), Tsigai and Zackel, and the crossbred lambs with foreign meat breeds are given such as a slaughter value, percentage of some meat categories in carcass and results of sensory and instrumental evaluation of meat. Turnover of the lamb meat is presented as a delivery to the market, which in the same period was on the average 8 thausand tons, with on outstanding negative rate of 15% per annum. Reasons for the present situation in this field and possibilities of an increase of a total lamb meat production as well as the way of improvement of its quality are also given in this paper.
