The purpose is to analyse the influence of nitrogen on the final yield of sugar beet taking several aspects into account: a) the evolution of the nitric nitrogen content in the soil, b) the evolution of nitric nitrogen in the petiole, and c) the evolution of alpha-amino nitrogen. The variability which exists in autumn-sown crops in southern Spain (wet/dry years, irrigation/dry farming, high/low yields) allows a wide interval of situations to be considered. In general, dry-farmed sugar beet shows little response to the application of nitrogen. The residual nitrogen present in the soil is an important input under these conditions. The low levels of rainfall in spring usually limits the productive potential much more severely than the availability of nitrogen. With respect to the cultivation of sugar beet on drained land, the response to the application of nitrogen is much more marked: in these cases the losses due to the effect of water (both of residual nitrogen and that applied to the sugar beet) are considerble. Under these conditions, the efficiency of fertilisers applied is very low and needs to be improved through scheduling and the means of application. As regards final yield, polarimetry is not negatively affected by high alpha-amino nitrogen content in the root. The explanation of this anomalous situation could be the water stress suffered by sugar beet in very high temperatures.
