Content of cholesterol in relationship to content of fat in some tissues of bulls and pigs

The intake of exogenous cholesterol and fats of animal origin is considered to be an important risk factor in arteriosclerosis rise. The aim of this work was to find the relation between content of cholesterol and fat in skeletal muscles and other tissues of slaughter bulls and pigs. We used slaughter bulls weighing 550 kg (n = 191) and slaughter pigs weighing 120 kg (n = 66) in our experiment. The cholesterol content was determined as described by Hornakova et al. ( 1974), the content of fat after extraction by diethylether in Soxlet's apparatus (STN 57 0l85). The highest cholesterol content was found in brain of slaughter pigs and bulls (2836.4, 2300.80 mg/100 g respectively), further in kidneys and liver. We found positive relation between the content of cholesterol and fat (r = 0.938, 0.896, resp.; P 0.001) in the whole set of inner organs of slaughter bulls and pigs. The lowest content of cholesterol was in skeletal muscles of slaughter bulls as well as pigs (76.71, 86.22 mg/100 g , resp.), and the correlation between the cholesterol content and fat content was not significant (P 0.05)
