Studies for determining parameters and technology for production of dry bulgarian youghurt, containing high number of living lactis acid microorganisms have been carried out.The product is intended for reconstitution as a fermented milk products as a component for fermented deserts or for application in cosmetics.The developed technological process provides the obtained of dry product, containing more than 1 000 000/1g living acid bacteria.
