Bulgarian oleic sunflower oil

Fatty acid copmposition of glyceride oil, produced by hybrid sort "Olbaryl" selectioned and cultivated in Bulgaria was investigated. Oleic and linoleic acid were found to be the major components (82.3% and 9.1% respectively). Peroxidative number (P.n.) expressed as meq O2/kg-1 and lnduction period (l.p.) determined by "Rancimat" 679 at 1000C and 20 l/h flow of air characterized the oxidative stability of the oil. The obtained values for oleic type sunflower oil (P.n. = 7.0 and l.p. = 9.2h) were better than linoleic type (P. n. = 5.1 and l.p. = 5.5 h) and were close to these of olive oil (P.n. = 5.8 and l. p. = 10.8 h). In agriculture terms the obtaining of oleic type hybrid sorts sunflower seeds and their processing are close to traditional growing sorts sunflower. The high oxidative stability of the studied oleic type oil enlarges the possibilities of their application in food industry without deteriorating of their consumer quantities.
