Character of cultivated vegetables in Osaka [Japan]

We investigated the contents of vitamins and minerals in leaf vegetables and the characters of eggplant "mize-nasu" which were cultivated in Osaka. 1) "Komatsuna" (a cultivation of brassica pekinensis) have much carotene and total vitamin C, and "Mana" (a cultivation of Brassica pekinensis) have much Ca, Chrysanthemum coronarium, Mana and Spinach have much Fe. 2) Leaf vegetables have much deferent content of Fe (5 times). It was considered that Fe contents in soils affected one in vegetables. 3) Total vitamin C contents in Spinach were lower than one of the standard tables of food composition in Japan. But total vitamin C contents in Chrysanthemum coronarium and "Osaka shirona" (a cultivation of Brassica pekinensis) were higher than one of the standard tables of food composition in Japan. 4) Eggplant "mize-nasu" have more soft skin and more water content than common culture variety
