The incidence of nitrate and nitrite residues in the selection groups of meat products

55 samples of meat products on the contents of nitrate and nitrite were analysed. The values determination no exceeded maximum residue limits by Food Codex of the Slovak Republic. It was detection medium till high variability a content NaNO2 and NaNO2. The correlation coefficient between content nitrite and nitrate at individual groups products weren't statistic significant
