Relationships between phenolics, Lignin, peroxidase and the increased firmness of damaged pericarp of mangosteen fruits after impact

Firmness, phenolics and lignin content and peroxidase activity were studied in damaged pericarp of mangosteen fruits after impact. The firmness of damaged pericarp increased rapidly after impact. Damaged pericarp in the absence of oxygen had less firmness and lignin and more total phenolics than damaged pericarp in the presence of oxygen after impact. Peroxidase activity of damaged pericarp was greater than that of non-damaged pericarp after impact. Damaged pericarp with cycloheximide treatment had less firmness and lignin and more total phenolics than that of damaged pericarp without cycloheximide treatment. Total phenolics in non-damaged and damaged pericarp separated by thin layer chromatography were found to have no difference in ascending pattern and Rf values. Five Rf values (0.00, 0.03, 0.06, 0.30 and 0.46) of phenolics in damaged pericarp had a decreased absorbance at 190-400 nano m. These results of impact may enhance metabolism of phenolics incorporation and increase peroxidase activity in damaged pericarp of mangosteen fruits resulting in a rapid synthesis of lignin, which in turn increases the firmness of damaged pericarp.
