The investigation of phenolic matters during flowering and fruit developing periods in oliva var. Gemlik

This work was made in Trace University Agricultural Faculty, Horticultural laboratories between May and November in 8 periods (with one month gap) to find out the change of phenolic matters from flowering to matturity (harvesting) and postharvest periods in olive var. Gemlik which belongs to Bursa province. The extract samples were analysed by using thin layer chromotography (T.L.C.). According to analyses, 41 phenolic matters were determined without depending on the variety and periods. Six of them were flavonoids, twenty phenil propan substances, 11 tanens, 1 flavonoid-carbon and 3 of them unknown matters which gave very light cream colour
