Rapid expansion of industry during the past five years has resulted in labour shortage both in agricultural and industrial sectors. The food processing factories, both big or small, which garlic is used as part of their process, also face this labour problem due to still process garlic manually. To solve of mentioned situation labour shortage the garlic processing machine has been designed and developed. The machine is 1200*1900*1900 mm (WLH) in dimensions, with 3hp electric motor as power source. The prototype consists of 3 main units: processing from garlic bulbs to garlic cloves unit, sorting unit, and peeling unit. After fixing all of the flaws that came up during the testing, the prototype was developed. The machine can apparently replace labour, reduce difficulty and save a lot of time in garlic processing. It is found that the peeling capacity of the machine is 33.19 kg/h : 11.02 percent of completely peeled-off garlic flesh : 11.25 perent of party peeled-off garlic flesh : 13.06 percent of pulpy garlic flesh; and 64.67 percent unpeeled garlic. Break-even point of the machine is 68.68 hour/year or 2279.72 kg/year.
