Bifidobacteria - function and role

Bifidobacteria live naturally in large numbers in human colon, where they have function in maintaining the balance of intestinal microflora. At the same time it could be said, that certain strains of lactic acid bacteria, including bifidobacteria, possess probiotic effects. There is certain number of fermented milks on the market, which are produced with starters, containing those bacteria including bifidobacteria, and almost in every case those products are labeled as functional food with therapeutic function. Indeed scientific data suggest that milk fermented with these bacteria have positive effects on intestinal motility, preveting colon cancer, preventing various forms of diarrhea and immunomoduling. Until now, the main criteria for bifidobacteria strain selection has been survival both in the product and in the intestinal tract after consumption. But the present scientific interest for probiotics, has changed minds of consumers. Besides nutritive value and organoleptic qualities consumers will soon be able to add new criteria and that are health effects.
