Preset status and development trends of the Hungarian fish processing sector

This paper outlines the present status and development trend of the fish processing sector and analyse the fulfilment of the most important regulations of the sector. Processing technologies and their technical-hygienic aspects of processed fish products having high demand on the rapidly expending food market are also discussed in the paper.
