Evaluation of proximate and mineral composition and limiting amino acids content of some released and pre-released back gram cultivars

Biochemical constituents in the grains of ten black gram cultivars evaluated for proximate composition on a dry weight basis revealed the content of crude protein crude fat, crude fibre and carbohydrates in the range of 17.93-29.60, 1.05-1.89, 2.55-3.39 and 53.23-66.65 per cent, respectively. The total ash content varied from 2.52 to 4.12 per cent. The contents of minerals viz., phosphorus, iron manganese and zinc were in the range of 213.71-324.79, 6.75-11.61, 7.28-12.46 and 3.32-4.98 mg 100g-1, respectively. The content of limiting amino acids in black gram seed proteins such as methionine and tryptophan varied from 0.69 to 0.93 and 0.32 to 0.80 g 16g N-1, respectively. Among the ten cultivars, the cultivars TAU-2 had the highest amount of crude protein (29.60%). The cultivar PU-9205-20 had comparatively higher amount of phosphorus (324.79 mg 100g-1). The iron content in BDU-1 was the highest, i.e., 11.61 mg 100g-1. The cultivar PU-9002-15 contained a fairly high amount of methionine (0.93 g 16g N-1.
