Effect of environmental pollution on quality of beef in relation to time in Peshawar [Pakistan]

Meat consumed by the public is sold in the open market and even on roadsides. Special attention was focused on the determination of selected essential/heavy metals in meat samples. For assessing daily environmental contamination, beef samples were purchased immediately after slaughtering and after specific exposure time from different shops. The meat-flesh was analyzed for lead (Pb), cadmium (Cd) and copper (Cu) by the potentiometric technique; while iron (Fe) & phosphorus (P) were determined by Spectrophotometry. Generally the concentration of the metals was higher in the samples collected in late hours than the fresh ones. The samples from Bacha Khan Chowk had maximum level of Cd (1.36 plus minus 0.10 ppm) and Pb (8.60 plus minus 0.60 ppm) while highest level of Cu (6.97 plus minus 0.56 ppm) was found in sample purchased from Nothea. The Fe (2.74 plus minus 0.25 mg/100g) and P (202.7 plus minus 18.24 mg/100g) levels were higher in samples from Nothea. The data revealed that majority of meat samples were highly contaminated with bacteria and were considered unfit for human consumption. About 50% samples of beef showed presence of Salmonella; as well as E. coli. Some physical quality indices were also investigated.
