Current view of malting barley quality

Progress in cultivating of spring barley varieties involved yield and quality. The malting barley quality is well defined and it is tightly connected with structural and functional status of a barley caryopsis. Nevertheless the current status of knowledge about the quality does not cover all its aspects. In the framework of research programmes new barley and malt quality parameters have been developed. Requirements on the malting quality are influenced by the manufacturing industry, mainly by production concentration and automation and by competition among producers. Successful varieties of malting barley have to enable the production of beer of required gustatory and further qualities with the lowest possible production costs
