Current levels of nitrites and nitrates in animal products

Nitrites and nitrates present in food products are extraneous components which can affect adversely the health of consumers. They enter the food chain via feeds grown on soil with high content of nitrogenous substances. Still more serious problems arise from failure to observe the prescribed technological procedures for production of foods of animal origin. In an effort to elucidate the situation in this sphere and, at the same time, protect the health of consumers the State Veterinary Institutions (SVI) carry out analyses required by food safety supervision bodies or those needed by producers in the process of certification of their products. The paper presents actions taken in this directions at the SVU in Kosice in 1999 and compares the results with those from the previous years
