Yield and technical quality of beet as a raw material has increased considerably through breeding and improvement of cultivation methods in the past 20 years in north western Europe. The importance of breeding is high, although it changes for the various characteristics as a consequence of the heritability. Due to physiological relationships, there is a close negative correlation for sugar beet between root yield and sugar content. On the contrary, the relationship between root yield/sugar content and molassigenic substances is neither close nor uniform. The maximum potential of dry matter formation of the beet is determined by physiological processes such as leaf and root development and maximum assimilation rate, which can be calculated. For breeding there is a different consequence for yield and quality characteristics that has to be utilized in order to guarantee the optimal progress.
