The paper presents the results of quality analysis of winter wheat varieties ('Ibis', 'Portal', 'Sirvinta 1', 'Marabu', 'Zentos', 'Jubilatka') grown in plant species research stations in different regions of Lithuania in 1997-2000. Correlative relation of wheat chemical composition and technological properties with dough mixing characteristics has been evaluated. The experiments have established the existence of strong correlation dependency (r=0.77-0.86) between water absorbtion, dough mixing duration and the amount of proteins and gluten
