Incidence of Listeria spp. in selected raw fish, semi-processed and processed fish products

Compared with brown trout carcasses Norvegian salmon was contaminated with Listeria spp. in the small part. Listeria spp. were not detected in Alaskan pollock and cod filets. Fish processing - fileting, smoking, crumb-coating - causes a significant increase of Listeria spp. in products. The results point to the lack of sufficient hygienic conditions in the processing environment as the main source of frequent presence of analysed pathogens in fish products
