Three methods (ITV, CASV and Glories 1&2) used for maturation of phenolic compounds monitoring are tested on Pinot noir and Gamaret during the 2000 season. All are based on the measurement of free anthocyanins extracted from the berries during ripening. The methods are reliable with a coefficient of variability below 7%. The physical and chemical extraction processes influence the concentration of anthocyanins extracted but very few the accumulation cinetics. ITV provides the most representative curve. CASV does not seem to be appropriate to our grape varieties. Glories 1&2 brings more information: in addition to the extraction obtained in wine condition (ApH3.2), an extraction at pH 1 informs on the total colour potential of the berries. Unfortunately, the number of measurements was not sufficient to allow an objective interpretation. The wines of three successive harvest dates were classified by sensorial analysis. For Gamaret, the late variant is preferred. It was harvested 17 days after the maximum level of anthocynins. No relation is shown between sugar evolution and quality of the preferred wine. This confirms the importance to follow the evolution of phenolic compounds during maturation in addition to regular parameters (acidity, sugar, pH). References should be gathered over several years in order to improve the interpretation of maturation curves.
