For preparation of dry dates (chhuara), the full doka fruits are washed and diipped in boiling water for 5-10 minutes and are dried either in air circulating oven at 40-50 C or sun-drying for 80-120 hours. Soft dates (pind khajoor) are prepared by dipping full doka/dang fruits in boiling waterfor 20-30 seconds and then dehydrating in oven at 40-42 C. Date fruits at partial or full dang stage can be converted in soft dates by simply drying them in air circulating oven. The average yield of well-managed plant is about 70-75 kg/year. Thus, it fetches a net return of Rs 60,000-Rs80,000/ha/year.
