The invention relates to food industry and can be used at small and medium business enterprises. A method of obtaining milk-protein stuff includes pulping a milk protein component, mixing thereof with flour, melange, other components and mixing the stuff obtained. As the milk-protein component, a buttermilk coprecipitate is used. The invention is distinguished by containing dry Cystosiera as the biologically active additive. The coprecipitate is pulped, mixed with wheat flour, melange, the Cystosiera comminuted up to sizes of 0.5...0.7 mm, chopped green. The mixture is mixed within 5...7 min, forced into a cellophane casing and frozen up to achieving a temperature of 3...5 deg Celsium in the centre of the baton. The stuffs on the basis of milk protein can be applied while making varenyks, vatrushkas, patties. The method proposed allows to fully use food potential of milk due to containing milk whey proteins of the buttermilk coprecipitate
