Dairy industry of Serbia and Montenegro undergoes a transition process based on privatization, which will be followed by structural changes based on organization issue. Currently two dairy associations are present: Union 'Zajednica stocarstva' consists of 40 dairies, which process cca. 600 million l of milk and 'Union of Yugoslav private dairies' consists of 162 dairies which process cca. 100 million l of milk annualy. It may be expected that changes in dairy industry will take both, milk production and processing. On milk production side main changes may include reduction of dairy farm number and increasing of their size, upgrading of milk payment system and milk origin certification. On processing side it is likely that merging, specialization and efficiency in byproduct utilization, as well as a promotion of autochthonous dairy product production will be a major driving forces in the process of dairy industry transformation.
