Heavy losses occur in plum during its post-harvest operations, since it has less storage life owing to soft texture of its fruits. These losses can be reduced by extracting pulp from fully ripe fruits of Santa Rosa plum which is having a composition of 10ø Brix and 1.5% acidity. This polp can be used for preparation of plum leather after adjusting 10-30ø Brix with sugar @ 300 g sugar per litre of fresh plum pulp and reducing the acidity from 1.5 to 1.3% and containing 1000 ppm potassium metabisulphite (KMS). It takes 30 hours to dry three layers of pulp of 7.5 mm thickness in a cabinet dryer at a temperature of 60 ñ 5øC to a moisture content of 13.80%. The prepared leather has best sugar/acid blend and retains better colour during preparation and storage. This leather could be utilized up to 6 months of storage in good conditions without changing its original colour and flavour.
