Potato production in the country is increasing steadily. During 2000-2001, total area under potato was 1.28 million ba with a total production of 22.27 million tonnes. Record levels of production during the last two decades has resulted in several post-harvest problems, the major problem being of storage. About 90% of the total potato production comes from Indo-Gangetic plains, which is harvested in February-March. Therefore, arrivals in market during this period are huge creating gluts which result in distress sale by farmers. Storage helps in regulating the arrival in market and reduces transport bottlenecks at peak period of production. Since fresh potatoes are available only for 2-3 months a year, requirement of table potatoes for remaining period of 9-10 months has to be met from stored potatoes. Potatoes being semi-perishable cannot be stored for 9-10 months without refrigeration. Therefore, cold storage becomes essential.
