Aflatoxin content of cereals and nuts inoculated by Aspergillus flavus inresponse to their proximate composition

Aflatoxin content of cereal grains and nuts (dry fruits) as inoculated withAspergillus flavus was determined by TLC and its relation with proximatecomposition was studied in the Pathology, Animal Nutrition and AgriculturalChemistry labs of NWFP Agricultural University, Peshawar during the year2000-2002. Aflatoxin content of cereals (wheat, maize and rice) ranged from 30to 50 mug/kg, and that of nuts (almond, walnut and peanut) varied from 10 to20 mug/kg. The aflatoxin content was within the safe limit (50 mug/kg asrecommended by FAO). The aflatoxin content of inoculated seeds significantly(p less than 0.05) increased over control (un-inoculate seeds). This waspositively related (r=0.65) to moisture content of the seeds. However, negativecorrelation (r= -0.50) existed between aflatoxin and ash content of the seeds.Protein, fat and total carbohydrate (NFE) contents were not significantlyrelated to the inoculum and its toxin production. It was concluded that themoisture and ash contents could be considered in minimizing the risk ofaflatoxin production.
