Study on the species and the nutrition values of edible insects in upper southern Thailand

Study was carried out in two steps. First, some edible insects and information were collected from local markets and local food shops in the provinces of Ranong, Chumporn, and Surat Thani. Totally 3 times of survey had been done during August 1997 to August 1998. Second, the samples were then analyzed to determine their relative values in terms of crude protein, crude fat, moisture, ash, fiber, calcium, phosphorus, sodium, and energy contents. The results showed that there were 19 species of 15 families in 7 orders of edible insects, i.e. Chondracris rosea brunneri, Acheta testaceus, Gryllus bimaculata, Gryllotalpa africana, Hydrophilus sp., Cybister sp., Lepidiota stigma, Apogonia sp., Rhynchophorus ferrugineus, Hypomeces squamosus, Lethocerus indicus, Oecophylla smaragdina, Carebara lignata, Vespa affinis, Apis florea, Erionota thrax thrax, Bombyx mori, Dundubia intermerata, and dragon fly. Only 15 species were analyzed for nutritional values, and D. intermerata had the highest protein content at the value of 29.54 g/100 g. R. ferrugineus had the highest crude fat at the value of 15.69 g/100 g. Most insects had high values of moisture, ash, and crude fiber contents. However, their values of calcium, phosphorus, and sodium content were quite low. A florea gave the highest energy with the value of 268.9 kcal/100 g.
