Equilibrium moisture content of Thai maize and growth of Aspergillus flavus

Basic study on the absorb and desorb of water by maize under various relative humidity conditions has been carried out. Wet and dried maize kernels were kept in constant humidity conditions prepared by several kinds of saturated inorganic salt solution for 9 weeks. Moisture contents in maize were periodically determined and equilibrium moisture contents cureves of maize, both absorb and desorb, were prepared. At the high humidity conditions, 93 and 84 percent, moisture content of maize equilibrated to 20-21 and 16-17 percent from both wet and dried maize after 7 or 8 weeks. At the conditions of below 80, 75 and 70 percent RH, moisture contents of both wet and dried maize were equilibrated to 15-16, 14-15 and 13-14 percent, respectively, after 9 weeks treatment. Growth of Aspergillus flavus was observed in maize of high equilibrium moisture content kept under 92 and 84 percent RH conditions, after 7 days inoculation and incubation.
