The paper deals with the research work carried out to explore the possibility of industrial production of multicomponent meals that are safe for the health of children over 8 months. In the cource of the research two groups of purees were made from chicken meat, vegetables and cereals. Four kinds of purees were produced in each group having the same composition, but varying in structure from one another. In this case, the structure implies that share of meat pieces and rice grains i.e. unhusked rice grains varied in ratio. In this way the nutrition of infants over 8 months would be approximated to that of adults. Considering the target group of potential users, the raw material utilized in the process of production had undergone chemical and sensory control and had also been tested for a possible content of harmful or toxic substances. The further testing also proved the microbiological suitability of the raw material i.e. components. The entire research work was conducted according to the existing law regulations. As the packaging constitutes an important factor of the overall quality of this class of products, the testing of the basic characteristics of the utilized packing material and also the control of already supplied packing units (jars and tops) were also carried out.
