Application of ELISA for measurement gliadin fraction content in wheat grain

In the present study various types of ELISA methods that utilized commercially available polyclonal antibodies for estimation of the gladin fraction contents in wheat grains Triticum aestivum were examined. The results show that because of cross reactions utilized antibodies are not suitable for the estimation of gladin content in gladin-glutein extracts. To avoid undesirable, non specific bouding between other extracted proteins special attention should be paid to sample preparation when polyclonal antibodies are used in the ELISA method
