[Improving a technology of instant food concentrates for infant and dietetic nutrition]

The thesis is dedicated to improving a technology of instant food concentrates on the basis of cereal extrudates. The processes are investigated, which take place when the interaction of the extrudates of starch-containing materials with water occurs and which underlie recovering thereof. The special features of the swelling process are disclosed. Developed are new types of BAA–enriched food concentrates having the prophylactic action when various diseases occur. The processes running while storing the new food concentrates are studied, and the use of polyethylene film of aseptic properties is proposed to prolong the storage terms. Normative documentation is developed and approved. The technology proposed has passed the industrial approbation
