Present status and innovative technologies for sago starch production and utilisation in Indonesia

Recent economic crisis in Indonesia has led to an increase in the roles of agribusiness and agroindustry in the national economy. As one of the national heritage symbols, the sago palm tree which was given less attention during the last decade, has an opportunity to be utilised more. This paper, therefore, highlights the acreage, potential of the sago palm and presents sago starch production, sago starch utilisation and future industrial applications for sago starch. The details are given about the starch production (using simple, traditional, semi-mechanized and fully mechanized technologies) and methods of utilisation (mostly for foods production at present, also for other industrial purposes in the future). It is recommended that sago starch quality must be improved to be able to enter the global market. On the other hand sago palm utilisation and preservation must be carried out together, to secure sago starch production in the future.
