Bioactive components in fruit from different apple varieties grown in Central part of Poland

The concentrations of ascorbate, low molecular weight thiols, selected subgroups of phenolics and antioxidative enzyme activity were determined in the apple peel of 35 genotypes after harvest in 2004. Mean contents of total ascorbate, cysteine, total glutathione and phenolics represented 4.6, 2.6, 3.2, and 6.6-fold variation, respectively. The biggest cultivar variation in relation to enzyme activities exhibited glutathione reductase, followed by ascorbate peroxidase and catalase. Of all tested genotypes the highest antioxidant potential in relation to tested compounds was noted for Idared, Kent, Ingrid Marie and Ontario cultivars. The results of this study showed that apple cultivars differed significantly in the tested antioxidant concentrations as well as enzymes activities. A large cultivar variation was noted in the tested subgroup of phenolics: concentration of favonols amounted from 73.8 (James Grieve) to 1254.2 mg gE-1 f.m. (Newtosh) and anthocyanins from the level below detect limit of method used (Sir Prize) to 619. mg gE-1 f.m (Idared). Of all genotypes the highest concentration of ascorbate was found in the Otava (921.3 mg gE-1 f.m.), next Sir Prize and Idared. The lowest content found in Macoun (198.5 mg gE-1 f.m.). The content of glutathione was the highest in Ingrid Marie (89.2 mg gE-1 f.m.), followed by Ontario and Rubinola and the lowest in Summerred (28.3 nmol gE-1 f.m.), on average
