[The influence of RYR1 gene on pigs meat]

Intensive selection on stockiness increase and simultaneous reduction of the contents of fat in pig carcasses has led to significant deterioration of meat. There is a paradox: at intensive selection the number of the animals simultaneously increases for increase in muscular weight in a touch, described the increased sensitivity stresses. At external or internal threat to dynamic balance of homeostasis there is a stress, as protective reaction of the organism, causing malignant hyperthermia owing to a mutation in rianodin- receptor gene RYR1. The given mutation leads to decrease in natural resistency, easing of humoral, fabric and cellular immunity mechanisms, to increase in a withdrawal of pigs, sharp decrease in reproductive function, feeding efficiency, deterioration of meat. Research directed on studying of a share of influence of gene RYR1 on quality of meat thoroughbred and young mixed growth of pigs are carried out. It is established, that presence of mutation in gene RYR1 is not the unique reason causing display of defects of meat РSЕ and DFD. It is revealed, that the mutation in gene RYR1 only in 30% of cases is reason РSЕ of meat, and 1% - DFD, that testifies to possible influence of technology factors of the prelethal maintenance, a way of slaughter of animals and, possibly, polygenic character of determination of meat quality attributes
