Study on the composition of fatty acid, vitamin E content and physicochemical properties of perilla oil

Китайский. 用气相色谱(GC)分析了紫苏油的脂肪酸组成,用高效液相色谱(HPLC)测定了紫苏油中维生素E含量,并对紫苏油的理化性质进行了研究。结果表明,紫苏油中不饱和脂肪酸含量为93.707%,其中亚麻酸含量最高,为60.752%,亚油酸和油酸含量分别为15.761%和17.194%;紫苏油中维生素E的总含量为500.9 mg/kg;紫苏油比重为0.928 8,折光指数为1.481 7,酸价为2.9 mg/g,碘价为1 980 g/kg,皂化值为190.7 mg/g,不皂化物为0.6%,水分及挥发物为0.07%,过氧化值为3.7 mmol/kg。紫苏油是一种极具开发潜力的营养保健油。

The content of linolenic acid is 60.752%, which is the highest. The content of linoleic acid and oleic acid are 15.761% and 17.194% respectively. High performance liquid chromatography (HPLC) test shows that the total content of vitamin E in perilla oil is 500.9 mg/kg. Physicochemical properties test result shows that specific gravity is 0.928 8, refraction index1. 481 7, acid value 2.9 mg/g, iodine value1 980 g/kg, saponification value 190.7 mg/g, unsaponifiable matter 0.6%, moisture and volatile matter 0.07%, peroxide value 3.7 mmol/kg. So it is evident that perilla oil is a nutritive health care oil with great exploitation potentialities.
