Adult steers for beef production: breed effect on animal performance, retail yield and carcass quality

The objective of this study was to evaluate the profitability of beef production in three breeds, Limousin, Brown Swiss and Asturiana de los Valles, adapted to mountainous areas but varying greatly in their mature size. Significantly higher growth rates and carcass weights were achieved by Brown Swiss and Limousin breeds than by the Spanish breed. The best results of dressing percentage (P less than 0.001), conformation (P less than 0.001) and saleable meat yield (P less than 0.001) were obtained by the Limousin breed. The Brown Swiss and Limousin breeds could be more suitable for the market than Asturiana de los Valles as consumers prefer steer meat with high lipid content (4.7 and 4.2 vs. 2.7, respectively, on the EUROP scale).
