Survey of the concentration of free amines in grape juices of native varieties [Trentino]

The content of cadaverine, ethylamine, histamine, methylamine, putrescine, tyramine, tryptamine and 2-phenylethylamine was measured in ripe and sound grapes of red (Lagrein, Marzemino, Rebo, Schiava, Teroldego) and white-fruited (Nosiola) varieties native to Trentino. The mean contents were (n = 35; mean +- st dev; microng/l): putrescine (1,348 +- 793), ethylamine (315 +- 279), methylamine (175 +- 149), histamine (129 +- 166) and cadaverine (29 +- 23). For 2-phenylethylamine, only part of the samples, roughly 40%, was over the quantitation limit (QL: 20 microng/l), with maximum value of 110 microng/l. Rarely tyramine and tryptamine were over the QL (10: microng/l). The differences observed among varieties for cadaverine, putrescine and methylamine need confirmation based on several vintage years. Other 53 samples of Enantio, Marzemino, Lagrein, Schiava, Teroldego and Nosiola grapes were analysed for the content of phosphoethanolamine and ethanolamine, without observing varietal differences. In the former, the mean concentration was 1.95 +- 1.32 mg/l, while half of the samples of the latter was under the QL (1 mg/l) and the others ranged from 1 to 14 mg/l

I contenuti medi (n = 35; media +- dev. st.; microng/l) dei campioni analizzati erano: putrescina (1.348 +- 793), etilamina (315 +- 279), metilamina (175 +- 149), istamina (129 +- 166) e cadaverina (29 +- 23). La feniletilamina superava il limite di quantificazione (QL: 20 microng/l) solo nel 40% dei casi, con massimo a 110 microng/l, mentre tiramina e triptamina erano a livello di tracce, raramente superiori ai 10 microng/l. Benché siano state osservate differenze tra varietà per cadaverina, putrescina e metilamina, delle conferme su base pluriennale sembrano comunque opportune. Su altre 53 uve di Enantio, Marzemino, Lagrein, Schiava, Teroldego e Nosiola, sono stati quantificati, senza osservare differenze varietali, i contenuti di fosfoetanolamina (media +- dev. st.: 1,95 +- 1,32 mg/l) e di etanolamina. Per quest'ultima, il 50 % dei campioni era inferiore al QL (1 mg/l) e il valore massimo era di 14 mg/l
