Lactic microflora in drinking yoghurt with added probiotics

Английский. The presence, by means of titration and identification, of standard bacteria and probiotics in drinking yoghurt was evaluated. The samples used in the study were randomly chosen from retail shelves and the results demonstrate that the strains declared on the label do not always correspond to the strains found during the analyses. Bifidobacterium spp., commonly used in commercial claims, was never found in this study, probably due to its very high sensitivity to oxygen and to the fact that the very stringent growth conditions that are set down make it not only technologically more difficult to be used but also to be cultivated in laboratory. Its efficiency could be due to the metabolites released after death. Among the most present lactic acid bacteria, L. casei was found to be the most resistant. L. acidophilus can be a good probiotic in products with a short shelf-life. Furthermore, it was confirmed that L. delbrueckii ssp. bulgaricus and S. thermophilus show good resistance. In the future it will be essential to carry out a clonal check by molecular genetic analyses to control that the used strains maintain the characteristics peculiar to them until the product expiry date

Le analisi dei campioni esaminati, scelti casualmente fra quelli in vendita, hanno dimostrato che non sempre i ceppi dichiarati in etichetta corrispondevano ai microrganismi ritrovati durante le prove. Bifidobacterium spp., molto utilizzato nei claim commerciali, non è mai stato ritrovato. Si ritiene che la sua elevata sensibilità all'ossigeno e le più stringenti condizioni di crescita richieste lo rendano non solo più difficile tecnologicamente da utilizzare, ma anche da coltivare in laboratorio. La sua efficacia potrebbe essere data dai metaboliti liberati dopo la morte. Tra i batteri lattici maggiormente presenti, il più resistente si è rivelato essere L. casei. L. acidophilus può essere un buon probiotico nei prodotti, però con una shelf-life breve, mentre confermano avere una buona resistenza L. delbrueckii ssp. bulgaricus e S. thermophilus. Un controllo clonale mediante analisi di genetica molecolare diventerà in futuro indispensabile per verificare che i ceppi utilizzati mantengano le loro caratteristiche peculiari fino alla data di scadenza dei prodotti
