Peracetic acid as disinfectant in food industry - efficiency evaluation and contribution to the standardization of efficiency evalution test

This study has as a main goal to give more detailed insight in efficiency of peroxide based disinfectants, in particular, to the disinfectants on the basis of peracetic acid (in further text - PAA), as biocides of newest generation, with special overview on its activity expressed in relation to bacterial spores, such are: Bacillus cereus ATCC 11778 and Bacillus subtilis NCTC 10480. These bacterias are used as reference microorganisms for evaluation of sporicidal activity, according to the internationally adopted standards. Probes are being made in the medium without and with organic challenge- interference substances, by using methodology defined in EU standards for efficiency evaluation of disinfectants and on that way we gave the contribution to standardization of aforementioned test, by additional systematization of collecting data regarding sporicidal activity of PAA based disinfectants.The collected results showed that disinfectant agent with commercial name Germiper (manufacturer NRK-Inzenjering, Belgrade, Serbia), which has active principle on the basis of PAA, in equilibrated solution of PAA, acetic acid, hydrogen-peroxide, water and stabilizer, showed very strong sporicidal activity on aforementioned test microorganisms (Bacillus cereus, Bacillus subtilis and Clostridium perfringens) and at the same time very expressed acting on spores of fungi, such as: Mucor sp., Aspergillus sp. and Penicillium sp., even in presence of organic challenge, in the sense of defibrinated horse blood.
