This article reveals the features of the organization of quality and safety state control system of agricultural and food products. The main structural units of functioning state control system of food products and foodstuff are fully and objectively presented. These units also provide compliance of agroindustrial complex production with requirements of the national standarts, which regulate quality and safety rates to prevent customer delusion. Due to entering the Republic of Belarus to the WTO rote of quality and safety state control system of agricultural and food products increases. The analysis of the existing situation is necessary for scientific explanation and strategic work out in order to improve the structure of quality and safety control system taking into account modern demands and tasks in the sphere of safety food supply. It is underlined that the Republican Control and Testing Complex on quality and safety of foodstuff can perform work on the organization of the control over quality and safety of food raw materials and foodstuff, coordination of research at creation of new kinds of food, an arbitration estimation of quality and safety of the foodstuffs, to carrying out of tests of a foodstuff on conformity to specifications and technical documentation requirements to quality, working out of techniques and introduction of new methods of estimation and quality assurance of foodstuff, training of experts of industrial laboratories of the agricultural processing enterprises and rendering the methodical and advisory help. Presence of modern technical base (high effective research equipment, standard samples of substances, measuring devices and auxiliaries) will allow employees of a complex to develop a technique of measurement of the maintenance of amino acids, mineral substances. It is necessary to create uniform system of requirements to quality and safety of agricultural raw materials and foodstuff
