[Use of the composition of vegetables and berries, and the complex polysaccaride POLYCOM for developing dairy cocktails]

The results of investigations into a possible use of food additives from raw materials (polysaccaride complex POLYCOM and a composition of vegetables and berries) in the production of milk drinks of preventive function are presented. Prepared drinks include complex protective substances (biological antioxidants and sorbents) that elevate the organism resistance to the unfavorable factors of the environment. As a result of research it is established that the dairy basis with the maintenance of dry skim milk no more than 43,05%, vegetative additives - a complex polysaccharides POLYCOM and the composition of the radio protective appointment representing a mix of dried up and crushed vegetables and berries, in the quantity which is not exceeding 0,92 - 2,30%, gelatin - no more than 0,73% can be used for preparation of the shaken up dairy product (cocktail) of preventive purpose. The specified parity provides the following organoleptic indicators: it looks like the shaken up dairy product (cocktail), colour – light - cream at POLYCOM addition and pink one - at addition of a composition of radio protective appointment, smell and taste - peculiar to a dairy product (cocktail) with fruit smack, consistence - homogeneous, without flakes of coagulated protein, high foam forming ability and good stability of foam
