Post mortem findings in a large slaughterhouse of quails [Coturnix coturnix japonica; Veneto]

In this communication, the findings collected between September 2001 and December 2003, during our regular ante and post mortem inspection activity in a slaughterhouse of quails, are reported. The sanitary inspection was carried out on samples, on a total number of 22,346,644 quails. 4,982,000 carcasses were checked by direct sensorial evaluation and at least 1,200,000 were completely checked. Totally, 565,405 carcasses of quails were rejected. The causes were: animals which arrived dead (20%), sternal bursitis (22%), insufficient bleeding (14%), starvation (13%), dirtiness of the carcass (13%), diffused haematoma (12%), mechanic injuries (5%)

L'ispezione sanitaria era effettuata a campione, su un totale complessivo di 22.346.644 quaglie. Con esame visivo diretto sono stati ispezionati 4.982.000 animali e di essi almeno 1.200.000 sono stati sottoposti a esame ispettivo completo. In totale, sono state sequestrate 565.405 carcasse. Le cause più importanti erano: animali giunti morti e non ammessi alla macellazione (20%), bursiti sternali (22%), dissanguamento insufficiente (14%), cachessia (13%), insudiciamento (13%), ematomi diffusi (12%), lesioni meccaniche (5%).]
