Crack resistance and grain quality of PSB Rc varieties

PSB Rc1 to Rc 72 were tested for crack resistance properties to moisture adsorption stress and analyzed for physicochemical properties. Although head rice yield was affected by location (Maligaya and Los Banos) and by crop year and season, PSB Rc36, Rc38, and Rc40 were consistently crack resistant. They had high amylose content (AC) and intermediate starch gelatinization temperature (GT). The PSB Rc rices were classified into AC-GT combinations had checked for Instron cooked rice hardness at water-rice ratio of 1.2 and for Amylograph and RVA pasting viscosity. Crack resistance as indexed by head rice yield after soaking rough rice for 1 to 3 h in water, was not related with other grain properties, except significant linear correlation with grain translucency and unstressed head rice yield in two crops. Instron hardness values of rice cooked at fixed water-rice ratio of 1.3 correlated positively with AC and with alkali spreading value (negatively with GT) and negatively with gel consistency value and may be used for grain quality screening in the breeding program.
