Determination of total antioxidant concentrations in French red wines and their Russian analogues

The antioxygenic properties of French red wines were examined. As example the different kinds of wine were studied and with Cahors wine of home manufarture were compared. The samples were under coulometric analysis by electrogenerating Br. The antioxidant content was re-calculated to QEA (Quercitin Equivalent Antioxidant) units. The reagent was chosen because of its abundance in plants, foods and beverages and accessibility. The French red wines are the richest in antioxidants. The value ot iree antioxidants in recalculation to quercetin (QEA value) amounts 2,10-17,72 mM, on average 9.70 mM. The Russian Cahors are rich in antioxidants, too. The content of antioxidants in white French wines was in 5 times lower in compare to red wines. QEA in antioxidant content French dry Cahors, but they lose a lot of active antioxidants during such process operations as fining and pasteurization.
