Meaty qualities of crosses of large white pigs and of landrace at different level of protein nutrition

The results of control fattening in pigs of breeds and breed groups of Russia demonstrated: meat content in a carcass 47-56%, fat content 35-42%, loin eye area 27-33 sq. cm, backfat thickness 31-43mm, carcass lenght 88-99 cm. Larger variability of economic characters which characterize slaughter qualities of animals allows selectioners to do effective work on obtaining and reproduction of pigs with large meat content in a carcass. Thus, increase in lean pork production is the most important reserve for meeting the consumer's demands in protein foodstuffs. By intensive meat fattening in crosses of the Large White breed and of the Landrace to liveweight 100 kg and by the 20%-higher level of protein nutrition in comparison with the existing standards, feeding period gets 5 days shorter, average daily gain increases by 10.6% in comparison with gilts of the second experimental group, in which the level of protein nutrition was in accordance with the standards. As far as the quality is concerned, the meat in crosses of the Large White breed and of the Landrace appeared to be better by both higher and lower levels of protein nutrition in comparison with purebred Large White gilts providing that basic indispensable amino acids are balanced in a ratio.
