Change in some physical properties of sucrose solution during apricot (Prunus armeniaca) [osmotic] dehydration

Osmodehydration is taking place in solution of distillated water and sucrose. When larger number of tests is carrying out, the preparation of fresh solution needs a certain amount of sugar. The plan of tests consider six times reuse solution with its reconcentration for each new experiment in order to minimize sugar consumption and to achieve optimization of the process. Some physical properties of the solution were observed during the tests. The surveying of electro conductivity and pH values of solution in six successive cycles was done. The increase of electro conductivity values was obvious as a result of water molecules and soluble organic acid transport from apricot halves. The changes in pH solution values were observed too. The conclusion is set down; the solution has significant potential for further tests because the mass ratio of fruit and solution is 1:10. The changes in physical properties of apricot halves were also studied, such as solid gain and moisture loss during the time of tests duration. The effect of solution temperature and concentration on solid gain and moisture loss are significant.
