Changes in cellular protein profile of Jackfriut due to Rhizopus rot

Biochemical alterations in jackfruit tissue as a result of infection by soft rot fungus. Rhizopus artocarpi(=R stolonifer) were investigated in respect of its nitrogen and protein profiles. It was observed that at the initial stage3s of infection, both the varieties exhibited initial rise both in total nitrogen and in total protein contents after which these parameter started to decline. On the contrary, with the progress of the disease, soluble nitrogen appeared to decline gradually in contrast to rapid loss of available soluble protein pool. The protein nitrogen content was found to increase steadily, above which it declined sharply in both the fruit varieties.
